Valldolina 'Brut Nature Reserva' Cava NV
Notes from Importer: An artisanal grower Cava from a certified organic vineyard led by winemaker Raimon Badell (vineyard/cellar site dates back to 1729 and winery established by the family in 1998). It is not easy to find terroir typicity for an entry-level Cava but this humble sparkling wine delivers. It is produced with the three usual varieties Xarello, Macabeo, and Parellada and a unique added touch of Chardonnay to improve structure, mouthfeel, and finesse. After the first frementation in steel tank, it is bottle aged on the lees for 24 months with no sugar added at disgorgement.
On the nose, an intense display of white fruit aromas is accompanied by notes of fresh baked pastries and hints of toasted almonds. The palate is fresh and lively with optimal carbonic integration and a persistent finish with mineral touches. The name was inspired by geographical feature known as 'doline', a series of large and impressive holes that can appear in the argilo-calcareous soils due to the ancient erosive activity of water. This is a very unique characteristic of the Garraf Massif (Catalonia) on full display in the small town of Olesa de Bonesvalls (Penedès).
