Clos Lentiscus - Litrona Sumoll
Hand harvested with 5 days of skin maceration (stems included). Spontaneous fermentation with native yeasts happens in very old foudre and amphora for only a few months after harvest before being bottled just as a 1 Liter, unfined, unfiltered, with zero SO2. Under 300 cases in total made for the vintage.
It is bright, fresh, with refreshing acidity and notes of cherry, blackberry and some tarragon. Nicely structured. A delicious chillable red.
Pairs so well with paella, chicken with rice (aka - arroz con pollo), roasted veggies and stuffed peppers.
